I want to replace my 15kW motor powered irrigtion system with a gravity one. I have a high hill on my farm and wish to confirm that the dam I wish to place on it is high enough. Also, the width of the the pipe I need to use. Are there any tutorials I can examine to perform the necessary calculations?

To get information about the pipe diameter needed, you can use following calculator:

Select from the top button bar to calculate D (press D button), for the pressure p1 - select m H2O as a unit - that's you actual hight of the hill, enter pressure drop - the same value as p1 - it means that all available energy will be used, enter flow Q as you wish, and enter a value for pipe length.
Hit calculate and you should get pipe diameter D calculated.
